- 2 cups dried navy beans (soaked overnight)
- 1 medium yellow onion (finely chopped)
- 1 cup unsulfured molasses
- 4 strips bacon (diced)
- 1/2 cup brown sugar
- 1 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Soak the dried navy beans in water overnight.
- In a skillet over medium heat, cook the diced bacon until crispy; reserve drippings.
- Sauté the chopped onion in reserved drippings until translucent.
- In a large bowl, combine soaked beans, sautéed onions, cooked bacon, molasses, brown sugar, mustard, vinegar, salt, and pepper; mix well.
- Transfer to a baking dish, add water to cover beans by an inch, cover with foil, and bake at 300°F (150°C) for 3 hours.
- Remove foil in the last hour of baking to caramelize the top.
