  • 2 cups dried navy beans (soaked overnight)
  • 1 medium yellow onion (finely chopped)
  • 1 cup unsulfured molasses
  • 4 strips bacon (diced)
  • 1/2 cup brown sugar
  • 1 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Soak the dried navy beans in water overnight.
  2. In a skillet over medium heat, cook the diced bacon until crispy; reserve drippings.
  3. Sauté the chopped onion in reserved drippings until translucent.
  4. In a large bowl, combine soaked beans, sautéed onions, cooked bacon, molasses, brown sugar, mustard, vinegar, salt, and pepper; mix well.
  5. Transfer to a baking dish, add water to cover beans by an inch, cover with foil, and bake at 300°F (150°C) for 3 hours.
  6. Remove foil in the last hour of baking to caramelize the top.
