Ingredients

  • 2 lbs Yukon Gold potatoes
  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • ½ cup chopped celery
  • 1 cup diced pickles (sweet or dill)
  • ½ cup finely chopped red onion
  • 4 hard-boiled eggs (optional)
  • Salt & pepper to taste

Instructions

  1. Wash and peel (if desired) the potatoes. Cut into even chunks.
  2. Boil potatoes in salted water for about 15 minutes until fork-tender. Drain and cool slightly.
  3. In a large bowl, mix mayonnaise and mustard until smooth.
  4. Chop celery, red onion, and pickles; add to mayo mixture.
  5. Gently fold in cooled potatoes, being careful not to mash them.
  6. Season with salt and pepper. Cover and refrigerate for at least one hour before serving.
