- 2 lbs Yukon Gold potatoes
- 1 cup mayonnaise
- 2 tbsp yellow mustard
- ½ cup chopped celery
- 1 cup diced pickles (sweet or dill)

- Salt & pepper to taste
Instructions
- Wash and peel (if desired) the potatoes. Cut into even chunks.
- Boil potatoes in salted water for about 15 minutes until fork-tender. Drain and cool slightly.
- In a large bowl, mix mayonnaise and mustard until smooth.
- Chop celery, red onion, and pickles; add to mayo mixture.
- Gently fold in cooled potatoes, being careful not to mash them.
- Season with salt and pepper. Cover and refrigerate for at least one hour before serving.
