- 1 cup wild rice blend
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 cup heavy cream or milk (dairy alternative optional)
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- Juice of 1 lemon
Instructions
- Prepare your ingredients by chopping the onions, carrots, celery, and mincing the garlic.
- Place the chicken breasts at the bottom of the crockpot.
- Add wild rice, carrots, celery, onion, garlic, thyme, salt, and pepper on top.
- Pour in the chicken broth until everything is submerged.
- Cook on low for 6-8 hours.
- About 30 minutes before serving, stir in heavy cream or milk until combined.
- Before serving, add lemon juice to enhance flavor.
