  • 34 lbs chuck roast
  • 3 medium yellow onions, thinly sliced
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp Worcestershire sauce

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the chuck roast on all sides until browned (about 4-5 minutes per side). Remove and set aside.
  3. In the same pot, add sliced onions and cook until golden brown and caramelized, stirring frequently. Add minced garlic during the last minute of cooking.
  4. Pour in beef broth and Worcestershire sauce, scraping up the bits stuck to the pot.
  5. Return the seared roast to the pot, add thyme and bay leaves, then season generously with salt and pepper.
  6. Cover with a lid or foil and bake for 3-4 hours or until fork-tender.
  7. Let rest before slicing against the grain, and serve warm with juices.
