  • 14 oz can diced tomatoes (no added sugar)
  • 2 cups low-sodium beef broth
  • 2 cups elbow macaroni (or pasta of choice)
  • 2 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add 2 tbsp olive oil. Sauté the chopped onion and minced garlic until fragrant (about 5 minutes).
  2. Add the ground beef, breaking it apart as it cooks until browned (6-8 minutes).
  3. Stir in the diced bell peppers and cook for another 3-4 minutes until softened.
  4. Incorporate the canned tomatoes and beef broth, scraping any bits from the bottom of the pot.
  5. Mix in the elbow macaroni along with paprika, oregano, salt, and pepper. Simmer for about 15 minutes or until the pasta is tender.
  6. Taste and adjust seasonings as needed before serving hot.
