  • 1 cup dried navy or great northern beans (soaked overnight)
  • 1 ham hock (about 1 lb)
  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Rinse soaked beans thoroughly and set aside.
  2. In a large pot, heat 2 tbsp olive oil over medium heat. Sauté onions, carrots, and celery for about 5 minutes until softened.
  3. Add garlic, thyme, and bay leaves; sauté for another minute until fragrant.
  4. Stir in the ham hock and soaked beans; pour in chicken broth until everything is covered by at least an inch of liquid. Bring to a boil.
  5. Reduce heat to low; cover and simmer for 1 to 1.5 hours until beans are tender.
  6. Remove the ham hock; shred any meat back into the soup while discarding skin/bones. Season with salt and pepper before serving warm.
