- 1 cup dried navy or great northern beans (soaked overnight)
- 1 ham hock (about 1 lb)
- 2 medium carrots, diced
- 1 medium onion, chopped
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Rinse soaked beans thoroughly and set aside.
- In a large pot, heat 2 tbsp olive oil over medium heat. Sauté onions, carrots, and celery for about 5 minutes until softened.
- Add garlic, thyme, and bay leaves; sauté for another minute until fragrant.
- Stir in the ham hock and soaked beans; pour in chicken broth until everything is covered by at least an inch of liquid. Bring to a boil.
- Reduce heat to low; cover and simmer for 1 to 1.5 hours until beans are tender.
- Remove the ham hock; shred any meat back into the soup while discarding skin/bones. Season with salt and pepper before serving warm.
