  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 cups diced carrots (about 2 medium carrots)
  • 2 cups diced celery (about 2 stalks)
  • 2 tsp turmeric powder
  • 6 cups low-sodium chicken broth
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions, garlic, and ginger until fragrant and onions are translucent.
  2. Add diced carrots and celery along with turmeric powder. Sauté until the vegetables soften slightly.
  3. Add chicken breasts to the pot, pour in chicken broth until submerged, and bring to a gentle boil.
  4. Reduce heat and let simmer uncovered for about 30 minutes until chicken is cooked through.
  5. Remove chicken from the pot, shred with two forks, and return to the soup along with lemon juice.
