Instructions

  2. Add chopped onion, diced carrots, and celery; sauté until onions are translucent (3–4 minutes).
  3. Stir in minced garlic along with thyme and bay leaf; cook for an additional minute.
  4. Pour in beef broth and add rinsed barley. Bring to a gentle boil, then reduce heat to low.
  5. Cover and simmer for about 1.5 hours or until the beef is tender. Stir occasionally to prevent sticking.
  6. Adjust seasoning with salt and pepper before serving hot.
