  • 2 ripe avocados, diced
  • 1/4 cup fresh cilantro, chopped (optional)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Season chicken with salt and pepper. Sear until golden brown on both sides; then remove and set aside.
  2. In the same pot, sauté minced garlic until fragrant (about 1 minute).
  3. Pour in chicken broth, scraping any bits off the bottom. Return chicken to the pot and bring to a gentle boil.
  4. Reduce heat and let simmer for about 20 minutes or until chicken is cooked through.
  5. Remove chicken again; shred with forks while adding cream cheese to the broth and stir until creamy.
  6. Add diced avocados and lime juice back into the pot along with shredded chicken; let mingle for another 5 minutes before serving garnished with cilantro.
