  • 2 celery stalks, chopped

  • 2 medium waxy potatoes, diced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables: carrots, celery, onion; mince garlic.
  2. In a large pot over medium heat, sauté onions in oil until translucent. Add minced garlic until fragrant.
  3. Add chicken breasts and pour in chicken broth. Simmer gently for about 20 minutes.
  4. Stir in carrots, celery, potatoes, thyme, bay leaves, salt, and pepper. Add heavy cream once bubbling; let simmer for another 15 minutes.
  5. Remove chicken from pot; shred and return to soup. Adjust seasoning if needed before serving.
