  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 medium carrots, sliced
  • 3 celery stalks, chopped
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 2 cups wide egg noodles
  • 2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Prepare your ingredients by chopping the onion, slicing carrots and celery, and mincing garlic.
  2. In a skillet over medium heat, sauté onions in a bit of olive oil until translucent. Add minced garlic for an additional 30 seconds.
  3. Transfer sautéed onions and garlic to the crockpot along with sliced carrots and chopped celery.
  4. Place chicken breasts on top of the vegetables and pour in enough chicken broth to cover everything (about 6 cups).
  5. Sprinkle dried thyme along with salt and pepper to taste.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  7. About 30 minutes before serving, stir in egg noodles and allow them to cook until tender.
  8. Taste and adjust seasoning if necessary; garnish with fresh parsley before serving.
