  • 8 oz fresh cheese tortellini
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach
  • 1 can (14.5 oz) diced tomatoes
  • 2 medium carrots, sliced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Set the Instant Pot to sauté mode. Heat olive oil, then add minced garlic and chopped onions; cook until fragrant.
  2. Stir in sliced carrots and cook for about 3 minutes. Add Italian seasoning.
  3. Pour in vegetable broth and diced tomatoes; stir well.

  5. Cook on high pressure for 3 minutes, then quickly release steam.
