  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the eggs in a pot covered with cold water. Bring to a boil over medium heat, then cover and remove from heat after boiling for 12 minutes.
  2. Cool the eggs in an ice bath until completely chilled. Peel under running water for easy shell removal.
  3. Slice each egg in half lengthwise and scoop out the yolks into a bowl. Mash yolks with avocado until smooth.
  4. Stir in mayonnaise, lemon juice, salt, and pepper until well combined. Adjust seasoning as needed.
  5. Fill egg whites with the avocado mixture using a spoon or piping bag.
  6. Garnish with paprika or chives if desired, then serve immediately.
