Ingredients

  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 1 cup freshly grated parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme or sage, chopped
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, pepper, and minced garlic in a bowl until evenly coated.
  3. Spread the seasoned squash on a parchment-lined baking sheet. Roast for 25-30 minutes until tender and caramelized.
  4. In a bowl, mix the parmesan cheese, breadcrumbs, and herbs.
  5. In a greased baking dish, layer half of the roasted squash, followed by half of the cheese mixture. Repeat with remaining squash and cheese.
  6. Bake for an additional 15-20 minutes until bubbly and golden brown.
