- 1 cup freshly grated parmesan cheese

- ½ cup panko breadcrumbs
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, pepper, and minced garlic in a bowl until evenly coated.
- Spread the seasoned squash on a parchment-lined baking sheet. Roast for 25-30 minutes until tender and caramelized.
- In a bowl, mix the parmesan cheese, breadcrumbs, and herbs.
- In a greased baking dish, layer half of the roasted squash, followed by half of the cheese mixture. Repeat with remaining squash and cheese.
- Bake for an additional 15-20 minutes until bubbly and golden brown.
