Ingredients

  • 2 pounds russet potatoes
  • 1 cup green cabbage, finely chopped
  • 4 scallions, chopped
  • 6 tablespoons unsalted butter
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Peel and chop the russet potatoes into even chunks. Rinse briefly under cold water.
  2. In a large pot, cover the potatoes with cold water, add salt, and boil until fork-tender (15-20 minutes).
  3. While cooking, melt 3 tablespoons of butter in a skillet over medium heat. Sauté cabbage and scallions until softened (5-7 minutes).
  4. Drain the cooked potatoes and return them to the pot. Mash until smooth.
  5. Mix in sautéed greens and remaining butter along with heavy cream. Season with salt and pepper to taste.
  6. Serve hot, drizzled with melted butter if desired.
