- 2 pounds russet potatoes
- 1 cup green cabbage, finely chopped
- 4 scallions, chopped
- 6 tablespoons unsalted butter
- ½ cup heavy cream
- Salt and pepper to taste
Instructions
- Peel and chop the russet potatoes into even chunks. Rinse briefly under cold water.
- In a large pot, cover the potatoes with cold water, add salt, and boil until fork-tender (15-20 minutes).
- While cooking, melt 3 tablespoons of butter in a skillet over medium heat. Sauté cabbage and scallions until softened (5-7 minutes).
- Drain the cooked potatoes and return them to the pot. Mash until smooth.
- Mix in sautéed greens and remaining butter along with heavy cream. Season with salt and pepper to taste.
- Serve hot, drizzled with melted butter if desired.
