  • 2 medium Yukon Gold potatoes (about 1 lb), diced
  • 1 cup fresh or frozen sweet corn kernels

  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 1 tbsp butter
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions
