- 8 oz block of feta cheese
- 4 cloves garlic, minced
- 2 cups cherry tomatoes (about 12-15)
- 1 medium onion, chopped
- 2 cups low-sodium vegetable broth
- 3 tbsp extra virgin olive oil
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- On a baking sheet, combine chopped onion, minced garlic, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil.
- Place the feta in the center of the baking sheet and drizzle with another tablespoon of olive oil.
- Roast for 25-30 minutes until tomatoes blister and feta is golden brown.
- Transfer the roasted mixture to a pot, add vegetable broth, and blend until smooth using an immersion blender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh basil.
