Description

Roasted Feta Soup is a comforting blend of creamy feta, sweet roasted tomatoes, and aromatic garlic, making it the perfect dish for chilly evenings.


Ingredients

  • 8 oz block of feta cheese
  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes (about 12-15)
  • 1 medium onion, chopped
  • 2 cups low-sodium vegetable broth
  • 3 tbsp extra virgin olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, combine chopped onion, minced garlic, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil.
  3. Place the feta in the center of the baking sheet and drizzle with another tablespoon of olive oil.
  4. Roast for 25-30 minutes until tomatoes blister and feta is golden brown.
  5. Transfer the roasted mixture to a pot, add vegetable broth, and blend until smooth using an immersion blender.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh basil.
