Description

Creamy spinach and mushroom gnocchi is a comforting vegetarian dish that combines pillowy gnocchi with a rich, savory sauce, perfect for cozy weeknight dinners or special gatherings.


Ingredients

  • Gnocchi
  • Fresh spinach
  • Cremini mushrooms
  • Heavy cream
  • Parmesan cheese
  • Garlic
  • Olive oil
  • Salt and pepper

Instructions

  1. Wash and chop the spinach; slice the mushrooms evenly.
  2. Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms and cook until golden brown.
  3. Stir in heavy cream and simmer for about 5 minutes until slightly thickened.
  4. Add chopped spinach, salt, and pepper; mix until the spinach wilts.
  5. Boil salted water in another pot, add gnocchi, and cook until they float (about 2-3 minutes). Drain well.
  6. Toss cooked gnocchi into the creamy mixture until coated. Serve topped with freshly grated Parmesan.
