- 12 oz penne or fettuccine pasta
- 1 cup sun-dried tomatoes in oil, chopped
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 1 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 2 cups fresh spinach (optional)
Instructions
- Prep your ingredients by chopping garlic and sun-dried tomatoes.
- In a large skillet over medium heat, heat olive oil and sauté the chicken until golden brown on both sides (approximately 6-7 minutes per side). Remove from pan.
- In the same skillet, add minced garlic and chopped sun-dried tomatoes; sauté until fragrant (1-2 minutes).
- Pour in heavy cream and simmer gently while stirring until the sauce thickens slightly (3-5 minutes).
- Add cooked pasta and fresh spinach; stir until combined and heated through.
- Slice the cooked chicken and place it on top of the pasta. Finish with freshly grated Parmesan before serving.
