Description

Ingredients

  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (mixed colors), diced
  • 1 small red onion, diced
  • ¼ cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil (extra virgin)
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. In a saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil over medium heat.
  2. Reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let sit covered for 5 minutes.
  3. While quinoa cools, chop cucumber, cherry tomatoes, bell peppers, red onion, and parsley into bite-sized pieces.
  4. In a bowl, whisk together lemon juice, olive oil, salt, and pepper until well combined.
  5. Fluff cooled quinoa with a fork in a large mixing bowl; add chopped veggies and dressing. Toss gently until evenly coated.
  6. Serve immediately or chill in the fridge for an hour before serving.
