- 1 cup quinoa
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers (mixed colors), diced
- 1 small red onion, diced
- ¼ cup fresh parsley, chopped
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp olive oil (extra virgin)
- Salt & pepper to taste
Instructions
- Rinse quinoa under cold water to remove bitterness. In a saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil over medium heat.
- Reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let sit covered for 5 minutes.
- While quinoa cools, chop cucumber, cherry tomatoes, bell peppers, red onion, and parsley into bite-sized pieces.
- In a bowl, whisk together lemon juice, olive oil, salt, and pepper until well combined.
- Fluff cooled quinoa with a fork in a large mixing bowl; add chopped veggies and dressing. Toss gently until evenly coated.
- Serve immediately or chill in the fridge for an hour before serving.
