  • 2 tsp peppermint extract
  • 1 cup heavy cream (for ganache)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until combined.
  3. Add eggs, milk, melted butter, and peppermint extract; mix until just smooth without overmixing.
  4. Divide the batter evenly between the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  5. While cooling, heat heavy cream in a saucepan until steaming; pour over chocolate chips in a bowl and stir until smooth.
  6. Once cakes are cooled, layer them with peppermint frosting in between and top with chocolate ganache.
