Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 2 tbsp fresh lime juice
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 1 cup halved cherry tomatoes

Instructions

  1. Cook the chicken breasts by poaching or grilling until they reach an internal temperature of 165°F (75°C). Let cool.
  2. Shred the cooled chicken using two forks.
  3. In a large bowl, mash the ripe avocados until smooth but slightly chunky. Add lime juice immediately to prevent browning.
  4. Mix in shredded chicken, diced red onion, chopped cilantro, halved cherry tomatoes, Greek yogurt, salt, and pepper.
  5. Gently fold all ingredients until well combined; adjust seasoning to taste.
