- 3–4 boneless, skinless chicken breasts
- 2 ripe avocados
- 2 tbsp fresh lime juice
- 1/4 cup finely chopped red onion
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 1/2 cup Greek yogurt
- 1 cup halved cherry tomatoes
Instructions
- Cook the chicken breasts by poaching or grilling until they reach an internal temperature of 165°F (75°C). Let cool.
- Shred the cooled chicken using two forks.
- In a large bowl, mash the ripe avocados until smooth but slightly chunky. Add lime juice immediately to prevent browning.
- Mix in shredded chicken, diced red onion, chopped cilantro, halved cherry tomatoes, Greek yogurt, salt, and pepper.
- Gently fold all ingredients until well combined; adjust seasoning to taste.
