  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup enchilada sauce (store-bought or homemade)
  • 6 flour tortillas
  • ½ cup sour cream (for serving)
  • 1 cup diced bell peppers
  • ¼ cup chopped green onions
  • ¼ cup fresh cilantro (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the chicken for 7-10 minutes until no longer pink. Shred the cooked chicken.
  3. In a large bowl, mix shredded chicken with half of the enchilada sauce, diced bell peppers, half of the cheddar and Monterey Jack cheese, and green onions until well combined.
  4. Place a generous scoop of filling on one side of each tortilla and roll tightly.
  5. Arrange rolled tortillas seam-side down in a greased baking dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  7. Bake for 20-25 minutes until bubbly and golden brown.
  8. Let cool slightly before serving with sour cream and garnish with cilantro if desired.
