- 1 cup red grapes, halved
- 1/2 cup toasted pecans, chopped
- 1 cup plain Greek yogurt
- 2 tbsp Dijon mustard
- 1 tbsp honey
- Salt and pepper, to taste
- 2 tbsp fresh herbs (dill or parsley), chopped
Instructions
- Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper and place on a parchment-lined baking sheet.
- Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C). Let cool before shredding into bite-sized pieces.
- In a large bowl, combine Greek yogurt, Dijon mustard, honey, salt, pepper, and fresh herbs until well mixed.
- Gently fold in shredded chicken, halved grapes, and chopped pecans.
- Toss gently until well-coated. Cover with plastic wrap and chill in the fridge for at least 30 minutes before serving.
