  • 1 cup red grapes, halved
  • 1/2 cup toasted pecans, chopped
  • 1 cup plain Greek yogurt
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • Salt and pepper, to taste
  • 2 tbsp fresh herbs (dill or parsley), chopped

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper and place on a parchment-lined baking sheet.
  2. Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C). Let cool before shredding into bite-sized pieces.
  3. In a large bowl, combine Greek yogurt, Dijon mustard, honey, salt, pepper, and fresh herbs until well mixed.
  4. Gently fold in shredded chicken, halved grapes, and chopped pecans.
