- 4–5 garlic cloves
- 1 red bell pepper
- 1 green bell pepper
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 4 cups low-sodium chicken broth
- Tortilla strips
- Fresh cilantro
- Juice of 1 lime
- Cumin and chili powder
Instructions
- Dice the onion and bell peppers; mince the garlic.
- In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
- Add chicken breasts along with cumin and chili powder; cook for about 2 minutes until fragrant.
