Instructions
- Wash all vegetables thoroughly. Slice the cucumber lengthwise into strips about 1/8 inch thick.
- In a bowl, combine finely chopped carrots, red bell pepper strips, and avocado slices. Optionally, add rice vinegar for extra flavor.
- Lay one cucumber strip on a clean surface. Place 1-2 tablespoons of the filling mix at one end and roll tightly but gently.
- Secure with a toothpick if needed, drizzle with soy sauce, and sprinkle toasted sesame seeds on top before serving.
