Ingredients

  • 1 medium green cabbage
  • 2 large carrots
  • 1 yellow onion
  • 3 cloves garlic
  • 4 cups low-sodium vegetable broth
  • 2 medium potatoes
  • 2 tablespoons tomato paste
  • Fresh thyme and bay leaf
  • Salt and pepper to taste

Instructions

  1. Wash and chop the cabbage into bite-sized pieces. Dice the onion and garlic, and slice the carrots.
  2. In a large pot over medium heat, sauté onions and garlic in olive oil until translucent.
  3. Add carrots and diced potatoes; cook for about 5 minutes until slightly softened.
  4. Pour in vegetable broth and stir in tomato paste; mix well.
  5. Add chopped cabbage, thyme, bay leaf, salt, and pepper. Bring to a simmer.
  6. Cover the pot and reduce heat; simmer for 30-40 minutes until all vegetables are tender.
