- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 2 cups low-sodium vegetable broth
- 2 tsp curry powder
- 2 cups fresh spinach or kale
- Juice of 1 lime
Instructions
- Rinse red lentils under cold water until clear. Chop onion, garlic, ginger, and greens.
- In a large pot over medium heat, sauté onion in oil until translucent. Add garlic and ginger; cook for 1 minute.
- Stir in rinsed lentils and curry powder; toast for 2 minutes.
- Pour in coconut milk and vegetable broth; bring to a simmer for about 5 minutes.
- Reduce heat and simmer for 20 minutes until lentils are tender. Stir occasionally.
- Add spinach or kale during the last few minutes of cooking and squeeze lime juice before serving.
