  • 1 cup red lentils
  • 1 can (14 oz) full-fat coconut milk
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 cups low-sodium vegetable broth
  • 2 tsp curry powder
  • 2 cups fresh spinach or kale
  • Juice of 1 lime

Instructions

  1. Rinse red lentils under cold water until clear. Chop onion, garlic, ginger, and greens.
  2. In a large pot over medium heat, sauté onion in oil until translucent. Add garlic and ginger; cook for 1 minute.
  3. Stir in rinsed lentils and curry powder; toast for 2 minutes.
  4. Pour in coconut milk and vegetable broth; bring to a simmer for about 5 minutes.
  5. Reduce heat and simmer for 20 minutes until lentils are tender. Stir occasionally.
  6. Add spinach or kale during the last few minutes of cooking and squeeze lime juice before serving.
