Ingredients

  • 1 cup green or brown lentils
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley or cilantro, chopped
  • 2 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water until clear. In a pot, combine lentils with three cups of water. Bring to a boil and simmer for 20-25 minutes until tender but firm. Drain and let cool.
  2. Chop the cherry tomatoes, cucumber, red onion, and herbs into bite-sized pieces.
  3. In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
  4. In a large bowl, combine cooled lentils with chopped veggies and herbs. Drizzle with dressing and toss gently to mix.
  5. Chill in the refrigerator for at least 30 minutes to meld flavors before serving.
