Ingredients

- 1 cup green or brown lentils
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley or cilantro, chopped
- 2 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water until clear. In a pot, combine lentils with three cups of water. Bring to a boil and simmer for 20-25 minutes until tender but firm. Drain and let cool.
- Chop the cherry tomatoes, cucumber, red onion, and herbs into bite-sized pieces.
- In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
- In a large bowl, combine cooled lentils with chopped veggies and herbs. Drizzle with dressing and toss gently to mix.
- Chill in the refrigerator for at least 30 minutes to meld flavors before serving.
