  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tsp dried Italian herbs
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Boil water in a pot and cook the orzo according to package instructions until al dente (about 8-10 minutes). Drain and return to the pot.
  4. In a skillet over medium heat, add olive oil and minced garlic. Sauté for about one minute until fragrant.
  5. Add cherry tomatoes and zucchini slices to the skillet; cook until slightly softened.
  6. Stir in fresh spinach until wilted (about two minutes). Combine with the cooked orzo and dried Italian herbs.
  7. Transfer the mixture into the prepared baking dish and place seasoned chicken breasts on top. Sprinkle with grated Parmesan cheese generously.
  8. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until chicken is cooked through.
  9. Let rest for five minutes before serving.
