Description

A creamy, comforting dish that combines tender orzo with vibrant spinach and rich parmesan cheese. Perfect for weeknight dinners and guaranteed to impress!

Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • ½ cup freshly grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Prep the ingredients: Chop garlic and measure out the orzo and broth.
  2. 2. Cook the orzo: In a large pot, bring salted water to a boil. Add orzo and cook until al dente (8-10 minutes). Drain, reserving some pasta water.
  3. 3. Sauté garlic and spinach: Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant (about 30 seconds), then add spinach, cooking until wilted.
  4. 4. Combine: Stir in the cooked orzo with sautéed garlic and spinach, mixing well.
  5. 5. Finish with parmesan: Add the freshly grated parmesan and a splash of reserved pasta water for creaminess. Stir until melted.
  6. 6. Serve: Plate warm, garnishing with extra cheese if desired.
