Description

Ingredients

  • Flatbread (store-bought or homemade)
  • Fresh cranberries
  • Ground cinnamon
  • Goat cheese (soft variety)
  • Olive oil
  • Honey
  • Fresh thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix fresh cranberries with olive oil, honey, and cinnamon. Spread on one half of the baking sheet and roast for about 15 minutes until they burst.
  3. While cranberries roast, spread softened goat cheese over the other half of the flatbread.
  4. Once the cranberries are done, add them over the goat cheese, garnishing with fresh thyme if desired.
  5. Bake the flatbread for an additional 10-12 minutes until golden brown.
  6. Remove from the oven, let cool slightly, slice into squares, and serve warm.
