- 1 cup diced bell peppers
- 1 cup fresh spinach

Instructions
- Rinse quinoa under cold water until clear. In a medium pot, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic and bell peppers until softened.
- Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper.
- Cook eggs sunny-side-up or scrambled in a separate skillet if using.
- Fluff cooked quinoa with a fork, layer into bowls, top with sautéed veggies, eggs (if using), avocado slices, and salsa as desired.
