Ingredients
- Lasagna noodles
- Ricotta cheese
- Spinach (fresh or frozen)
- Mozzarella cheese
- Parmesan cheese
- Eggs
- Pesto sauce
- Garlic powder
- Salt and pepper
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a bowl, mix ricotta, eggs, garlic powder, salt, and pepper until smooth.
- Sauté spinach in olive oil for 3-4 minutes until wilted; cool slightly before adding to the ricotta mixture.
- Spread pesto on the bottom of the baking dish. Layer noodles, half of the ricotta-spinach mix, and half of the mozzarella.
- Repeat layers with remaining ingredients: pesto, noodles, ricotta-spinach mix, and mozzarella.
- Cover with foil and bake for 25 minutes. Remove foil, add remaining mozzarella and parmesan, then bake uncovered for another 15-20 minutes until golden brown.
- Allow to cool for 10 minutes before slicing.
