Ingredients

  • Fresh shrimp (medium or large, peeled and deveined)
  • Bell peppers (red, yellow, green)
  • Sweet onion (like Vidalia)
  • Flour or corn tortillas
  • Olive oil
  • Spices (chili powder, cumin, garlic powder, paprika)
  • Fresh lime juice
  • Cilantro (optional)

Instructions

  1. Chop bell peppers into strips and thinly slice the onion. Rinse and pat dry the shrimp.
  2. In a bowl, combine lime juice with spices; toss in the shrimp until well-coated.
  3. Heat olive oil in a skillet over medium heat. Sauté onions until translucent, then add bell peppers.
  4. Push veggies to one side and add marinated shrimp; cook until pink and opaque (about 3-4 minutes per side).
  5. Warm tortillas in another pan or microwave until soft.
