  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium onion, diced
  • 2 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • Fresh cilantro for garnish (optional)

Instructions

  1. Dice the onion and bell peppers.
  2. In the slow cooker, layer the chicken breasts first, then add black beans, fire-roasted tomatoes, onion, and bell peppers.
  3. Evenly sprinkle taco seasoning over the top and pour in chicken broth.
