  • 2 tbsp rice vinegar
  • 1 ripe avocado, sliced
  • 1 medium cucumber, thinly sliced
  • 2 tbsp sriracha sauce (adjust based on spice preference)
  • 2 tbsp toasted sesame seeds
  • Optional: nori sheets for layering

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes) and let cool slightly before mixing in rice vinegar.
  2. In a bowl, mix cooked shrimp with sriracha sauce. Adjust for desired spiciness and set aside.
  3. Layer sushi rice into a round mold on a plate. Press down to form an even base, then add avocado slices.
  4. Add the spicy shrimp mixture followed by cucumber slices. Repeat layers if desired.
