Description

Springtime Vegetable Quiche is a delicious, vibrant dish featuring seasonal veggies and a creamy egg filling in a flaky crust. Perfect for brunch or light dinners, it embodies the essence of spring.

Ingredients

Scale
  • 1 pie crust
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup fresh asparagus, chopped
  • 1 cup red and yellow bell peppers, diced
  • 1 sweet onion, chopped
  • 1 cup grated Gruyère or Cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Fit the pie crust into a pie pan and prick the bottom with a fork.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until golden, about 5 minutes. Add bell peppers and asparagus; cook until tender-crisp.
  3. In a bowl, whisk together eggs and heavy cream. Season with salt and pepper.
  4. Fold in grated cheese and sautéed vegetables into the egg mixture.
  5. Pour the mixture into the prepared crust and bake for 35-40 minutes, until golden brown and set in the center.
  6. Let cool slightly before slicing and serving.
