- 1 head of cabbage
- 2 medium carrots
- 1 medium onion
- 3 cloves garlic
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- Fresh herbs (thyme or bay leaf)
- Salt & pepper to taste
- Lemon juice (optional)
Instructions
- Wash and chop all vegetables: dice the onion, slice the carrots, and chop the cabbage.
- In a large pot over medium heat, drizzle olive oil and sauté onions and minced garlic until fragrant.
- Add sliced carrots and chopped cabbage; then pour in vegetable broth and tomatoes. Bring to a gentle simmer.
- Season with salt, pepper, thyme, and bay leaf. Stir well to combine.
- Cover and simmer on low heat for about 30 minutes until vegetables are tender.
- Taste and adjust seasoning; add lemon juice if desired before serving hot.
