Description

This hearty and nutritious cabbage soup combines fresh vegetables in a warm, comforting bowl, perfect for chilly evenings or any cozy gathering.


Ingredients

Scale
  • 1 head of cabbage
  • 2 medium carrots
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • Fresh herbs (thyme or bay leaf)
  • Salt & pepper to taste
  • Lemon juice (optional)

Instructions

  1. Wash and chop all vegetables: dice the onion, slice the carrots, and chop the cabbage.
  2. In a large pot over medium heat, drizzle olive oil and sauté onions and minced garlic until fragrant.
  3. Add sliced carrots and chopped cabbage; then pour in vegetable broth and tomatoes. Bring to a gentle simmer.
  4. Season with salt, pepper, thyme, and bay leaf. Stir well to combine.
  5. Cover and simmer on low heat for about 30 minutes until vegetables are tender.
  6. Taste and adjust seasoning; add lemon juice if desired before serving hot.
