- 8 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 6 strips crispy bacon, chopped
- 2 cups romaine lettuce, chopped
- ½ cup mayonnaise
- 1 tbsp apple cider vinegar
- Salt & pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- Fry the bacon in a skillet over medium heat until crispy. Drain on paper towels.
- In a large bowl, mix chopped romaine, halved cherry tomatoes, and cooked bacon.
- In a separate bowl, whisk mayonnaise and apple cider vinegar until smooth.
- Fold the cooled pasta into the vegetable mixture along with the dressing until well combined.
- Season with salt and pepper to taste. Chill for at least 30 minutes before serving.
