Description

Ingredients

  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 6 strips crispy bacon, chopped
  • 2 cups romaine lettuce, chopped
  • ½ cup mayonnaise
  • 1 tbsp apple cider vinegar
  • Salt & pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Fry the bacon in a skillet over medium heat until crispy. Drain on paper towels.
  3. In a large bowl, mix chopped romaine, halved cherry tomatoes, and cooked bacon.
  4. In a separate bowl, whisk mayonnaise and apple cider vinegar until smooth.
  5. Fold the cooled pasta into the vegetable mixture along with the dressing until well combined.
  6. Season with salt and pepper to taste. Chill for at least 30 minutes before serving.
