Ingredients
- Graham cracker crust
- Full-fat coconut milk
- Granulated sugar
- Egg yolks
- Pure vanilla extract
- Shredded coconut (toasted)
- Heavy whipping cream
Instructions
- Preheat oven to 350°F (175°C). Crush 1 ½ cups of graham crackers, mix with melted butter, and press into a pie dish. Bake for 10 minutes until golden brown. Allow to cool completely.
- In a saucepan over medium heat, whisk together coconut milk, sugar, and egg yolks until thickened. Stir in vanilla extract and shredded coconut.
- Pour the filling into the cooled crust and refrigerate for at least 4 hours until set.
- Before serving, whip heavy cream until stiff peaks form and spread over the pie. Top with toasted coconut.
