  • 1/2 cup macadamia nuts (chopped)
  • 1 1/2 cups all-purpose flour

  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/3 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas until smooth.
  3. Add melted butter, sugars, and eggs, mixing until combined.
  4. In another bowl, whisk together flour, baking powder, salt, and shredded coconut.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Gently mix in chopped pineapple and macadamia nuts.
  7. Pour batter into the prepared pan and bake for 60–70 minutes or until a toothpick comes out clean.
