- 1 lb ground beef (lean)
- ½ lb pork sausage
- 4 cups fresh spinach (chopped)
- 2 medium carrots (chopped)
- 1 medium onion (finely chopped)
- 3 cloves garlic (minced)
- 6 cups low-sodium chicken broth
- ½ cup grated Parmesan cheese
- 2 tsp Italian seasoning
- 2 large eggs
- ¾ cup plain bread crumbs
- Juice of ½ lemon
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, pork sausage, bread crumbs, eggs, minced garlic, Italian seasoning, salt, and pepper. Form into small meatballs about one inch in diameter.
