Ingredients

  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 4 cups mixed greens (arugula and spinach)
  • 1 small red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 1/4 cup freshly squeezed orange juice
  • Zest of 1 orange
  • 3 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread on a lined baking sheet and roast for 25-30 minutes until golden brown.
  3. While the sweet potatoes roast, whisk together the orange juice, zest, Dijon mustard, honey or maple syrup, salt, and pepper in a bowl. Slowly drizzle in olive oil while whisking until combined.
  4. In a large bowl, combine mixed greens with roasted sweet potatoes, red onion slices, toasted walnuts, and feta cheese.
  5. Drizzle the vinaigrette over the salad mixture just before serving and toss gently.
