- 2 medium sweet potatoes (about 400g), peeled and diced
- 4 cups mixed greens (arugula and spinach)
- 1 small red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup walnuts, toasted
- 1/4 cup freshly squeezed orange juice
- Zest of 1 orange
- 3 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 tbsp honey or maple syrup
- Salt & pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread on a lined baking sheet and roast for 25-30 minutes until golden brown.
- While the sweet potatoes roast, whisk together the orange juice, zest, Dijon mustard, honey or maple syrup, salt, and pepper in a bowl. Slowly drizzle in olive oil while whisking until combined.
- In a large bowl, combine mixed greens with roasted sweet potatoes, red onion slices, toasted walnuts, and feta cheese.
- Drizzle the vinaigrette over the salad mixture just before serving and toss gently.
