  • 1 cup ditalini pasta
  • 2 tbsp extra virgin olive oil
  • 1 medium onion (diced)
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 4 cloves garlic (minced)
  • 6 cups low-sodium vegetable or chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté until onion is translucent (5–7 minutes). Stir in minced garlic for the last minute.
