Ingredients

  • 8 oz lo mein noodles
  • 2 cups mixed vegetables (fresh or frozen)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 green onions, chopped
  • 1 cup protein (chicken, shrimp, or tofu) – optional

Instructions

  1. Prep your ingredients by chopping veggies and mincing garlic and ginger.
  2. Boil water in a large pot; cook lo mein noodles according to package instructions until al dente. Drain and reserve half a cup of pasta water.
  3. In a large skillet over medium heat, add sesame oil until shimmering. Add garlic and ginger; sauté until fragrant (about 30 seconds).
  4. Stir in mixed vegetables; cook until softened. Pour in soy sauce while stirring to coat evenly.
  5. Add cooked lo mein noodles and reserved pasta water; mix well. If using protein, incorporate it now.
  6. Garnish with chopped green onions before serving hot.
