- 1 lb Beef Sirloin
- 8 oz Rice Noodles
- 3 cloves Fresh Garlic
- 1 inch Ginger
- ¼ cup Soy Sauce
- 2 tbsp Sriracha Sauce
- 2 tbsp Vegetable Oil
- 4 Green Onions
- 1 Bell Pepper
- Cilantro (optional)
Instructions
- Slice beef sirloin against the grain into thin strips. Finely chop garlic and ginger; slice bell pepper.
- Boil salted water, cook rice noodles according to package instructions until al dente, drain, and reserve some cooking water.
- In a large skillet over medium-high heat, add vegetable oil and sauté garlic and ginger until fragrant.
- Increase heat to high, add sliced beef, and stir-fry until browned (3-4 minutes).
- Add bell pepper, stir-fry for an additional 2-3 minutes.
- Pour in soy sauce and Sriracha; mix well, adding reserved noodle water for desired consistency.
- Toss in cooked rice noodles until coated in sauce; heat through for 1-2 minutes.
- Serve hot topped with chopped green onions.
