- 3–4 boneless, skinless chicken breasts
- Bell peppers (red, yellow, green)
- 1 medium onion
- Flour tortillas
- Shredded cheddar or Monterey Jack cheese
- Fajita seasoning
- Olive oil
- Sour cream (optional)
Instructions
- Slice chicken breasts into strips and chop bell peppers and onion.
- Heat olive oil in a skillet over medium-high heat. Cook chicken strips with fajita seasoning until golden brown (5-7 minutes).
- Add sliced bell peppers and onions; cook until softened (3-4 minutes).
- On half of each tortilla, sprinkle shredded cheese, then add the chicken mixture. Fold tortillas over.
- Wipe the skillet if needed and cook each quesadilla until golden brown on both sides (3-5 minutes).
- Slice into wedges and serve hot with sour cream or salsa.
