Ingredients

  • 34 boneless, skinless chicken breasts
  • Bell peppers (red, yellow, green)
  • 1 medium onion
  • Flour tortillas
  • Shredded cheddar or Monterey Jack cheese
  • Fajita seasoning
  • Olive oil
  • Sour cream (optional)

Instructions

  1. Slice chicken breasts into strips and chop bell peppers and onion.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken strips with fajita seasoning until golden brown (5-7 minutes).
  3. Add sliced bell peppers and onions; cook until softened (3-4 minutes).
  4. On half of each tortilla, sprinkle shredded cheese, then add the chicken mixture. Fold tortillas over.
  5. Wipe the skillet if needed and cook each quesadilla until golden brown on both sides (3-5 minutes).
  6. Slice into wedges and serve hot with sour cream or salsa.
