- 1 whole chicken (3–4 lbs)
- 2 fresh lemons
- 3 tablespoons olive oil
- 4 garlic cloves
- 2 teaspoons fresh rosemary
- 2 teaspoons fresh thyme
- Salt and pepper to taste
- Optional: carrots and potatoes for roasting
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse and pat dry the chicken.
- In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, chopped rosemary, and thyme.
- Rub the mixture all over the chicken and inside the cavity.
- If desired, toss chopped carrots and potatoes in olive oil; season with salt and pepper, placing them at the bottom of the roasting pan.
- Roast chicken for about 1 hour and 15 minutes or until juices run clear when pierced between thighs.
- Let rest for 10–15 minutes before carving.
