Description

Lemon Herb Roasted Chicken is a mouthwatering dish featuring tender chicken infused with zesty lemon and aromatic herbs, perfect for family gatherings or special occasions.


Ingredients

  • 1 whole chicken (34 lbs)
  • 2 fresh lemons
  • 3 tablespoons olive oil
  • 4 garlic cloves
  • 2 teaspoons fresh rosemary
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste
  • Optional: carrots and potatoes for roasting

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and pat dry the chicken.
  3. In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, chopped rosemary, and thyme.
  4. Rub the mixture all over the chicken and inside the cavity.
  5. If desired, toss chopped carrots and potatoes in olive oil; season with salt and pepper, placing them at the bottom of the roasting pan.
  6. Roast chicken for about 1 hour and 15 minutes or until juices run clear when pierced between thighs.
  7. Let rest for 10–15 minutes before carving.
