- 8 oz short pasta (penne or rotini)
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 2 tablespoons extra virgin olive oil
- 14 oz crushed tomatoes
- Fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Chop chicken into bite-sized pieces and mince garlic.
- In a large pot over medium heat, add olive oil. Once hot, add seasoned chicken and cook until golden brown (5-7 minutes).
- Stir in minced garlic and Italian seasoning; cook until fragrant (about 1 minute).

- Reduce heat to low, cover pot, and simmer until pasta is tender (15-20 minutes), stirring occasionally.
